In a pioneering initiative, the UK’s first dedicated fine dining experience for individuals with eating, drinking, and swallowing difficulties, known as dysphagia, took place today at Kapara Soho in London. This special event, organised by the Royal College of Speech and Language Therapists (RCSLT) in collaboration with Wiltshire Farm Foods, offered guests a unique opportunity to enjoy a texture-modified meal in the company of loved ones.

Dysphagia, which can arise from conditions such as dementia, stroke, and head and neck cancer, significantly impacts individuals’ quality of life, particularly their ability to socialise and enjoy mealtimes. Nick Hewer, President of the RCSLT, highlighted the importance of the event, stating, “Swallowing difficulties often coincide with other health issues and can make everyday interactions challenging. Today’s event is special because it allows those affected to enjoy a meal out, a simple pleasure many take for granted.”

The event featured a complimentary lunchtime meal, prepared by Wiltshire Farm Foods’ chefs Phil Rimmer and Jethro Lawrence. Rimmer, who has developed the company’s Softer Foods range over 16 years, emphasised the significance of the meals, “Our puréed meals are crafted with quality ingredients and advanced technology to ensure smoothness and a safe texture. It’s an honour to contribute to such an important cause.”

The menu included a selection of puréed dishes such as Pork in Apple Gravy, Salmon in Butter Sauce, Chocolate Cake, and Sticky Toffee Pudding. These meals are designed to be not only safe for individuals with dysphagia but also visually appealing and delicious.

Among the attendees was 99-year-old Olivia Shephard, who expressed her gratitude for the event. “This pop-up is a fantastic idea. I never eat out anymore, so to be invited to such an event is a real treat. It’s invaluable to see the incredible work being done by speech and language therapists and Wiltshire Farm Foods to support those with dysphagia.”

Wiltshire Farm Foods, based in Trowbridge, is known for its innovative approach to creating meals specifically for individuals with swallowing difficulties. The company’s Softer Foods meals have been recognised with a Queen’s Award for innovation, reflecting their commitment to enhancing the quality of life for their customers.

The company’s approach involves close collaboration between chefs and registered dietitians to ensure that meals are both nutritious and enjoyable. “We believe in the right of everyone to dine with dignity,” said Rimmer. “Our goal is to make mealtimes a pleasurable experience, not just in terms of taste but also in terms of safety and presentation.”

The event not only provided a delightful dining experience but also aimed to raise awareness about the challenges faced by those with dysphagia and the solutions available to support them. It represents a significant step forward in recognising and addressing the needs of individuals with swallowing difficulties.
